HEALTHY BANANA BREAD

This banana bread is super creamy and addictive. It is a little flat and doesn't rise too much but still tastes amazing. Give it a try... read the recipe below!!!

Ingredients:
- 1/4 cup coconut oil
- 2/3 tbsp apple sauce (make sure it's pure apple)
- 3 tbsp maple syrup
- 2 eggs
- 1 cup mashed ripe bananas
- 1 whole banana (to top) *Optional
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- Pinch of salt
- 1/2 tsp cinnamon
- 1 1/4 cup whole wheat flour
- 1/4 cup almond meal or oat flour

Method:
Preheat oven to 170 degrees celcius and line or oil a loaf cake tin (approx 12x20cm). 

In a large bowl, beat the syrup, oil, apple sauce, eggs, bananas (only 2) and milk using a whisk until completley combined. Then, add vanilla, baking powder and salt. Taking a large spoon or spatula, slowly fold in both flours until completley combined with the wet ingredients. It will be lumpy because of the bannana but that is fine. 

Transfer mixture to your prelined/greased tin. Cut your banana (if using) down the cnetre and place it on top of the wet mixture, cut side up. Put it in the oven for 50-60 mins (depending on the depth of your cake). Once it starts to brown on the top, take it out and spike it with a scewer; if it comes out clean, your banana bread is ready! Let it cool on a cooling rack for 20-30 mins before serving. This banana bread tastes great toasted, and you can also freeze it to keep it for longer!
