BAKED EGGS

INGREDIENTS:
Olive oil
4 free-range eggs
A punnet of assorted cherry tomatoes
1 sprig of fresh basil torn
6 button mushrooms sliced
Sea salt
Freshly ground black pepper

METHOD:
Preheat the oven to 200 degrees C. Taking some olive oil, grease 2 ovenproof dishes. 

Slice your mushrooms, quarter and halve your cherry tomato and roughly tear the basil leaves.   

Place your tomatoes, mushrooms and basil leaves into the prepared ramekins and then crack 2 eggs on top of each dish, seasoning with salt and pepper. 

Place in your preheated oven for about 10 minutes, or until the whites are set but the yolks are still runny, then serve straight, or with toast. ENJOY!!
